Fresh, Fast, Cool Summer Treats

Berry Sorbet (or any fruit!)
Ingredients
Fresh or frozen berries (or fruit of your choice)
Sweetener of choice (if looking for a no sugar choice, try honey or agave)
Directions
Freeze the fruit in advance. Simply place fruit in a food processor, or blender, and blend until smooth. Add sweetener to taste. If the fruit is super sweet and ripe, sweetener will not be needed. Scoop into serving dish and enjoy!
Blueberry & Yogurt Popsicles
Ingredients
2 cups of vanilla yogurt
1 1/2 cups frozen berries
Directions
Combine 1 cup of yogurt with berries, and mash together with a fork.
Alternate berry yogurt mixture and plain yogurt by the spoonful into popsicle molds (Dollar store or Amazon) and freeze.
Caprese Salad
Ingredients
Fresh ripe tomatoes of any kind
Fresh mozzarella cheese (babybel works here)
Fresh basil
Balsamic Vinegar (I love Bertolli)
Directions
Simply wash and slice tomatoes and basil leaves, cut or tear cheese into small bite pieces, and layer on dish. Sprinkle with balsamic vinegar to taste preference.
